Slow-Cooked Duck Stew with Vegetables

Ingredients:

  • 1 kg duck pieces (with bone)
  • 1 large onion (chopped)
  • 2 carrots (sliced)
  • 2 potatoes (diced)
  • 2 tomatoes (grated or blended)
  • 1 tablespoon tomato paste
  • 2 teaspoons duck spice mix
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions:

  1. In a pot, heat oil and brown the duck pieces until golden. Remove and set aside.
  2. In the same pot, sauté onions until soft, then add tomatoes, paste, and spices.
  3. Return duck to the pot, add vegetables and enough water to cover.
  4. Cover and simmer for 1.5 to 2 hours on low heat until meat is tender and sauce is rich.
  5. Serve with pap or steamed bread.

Perfect for cold evenings or Sunday lunch.
