Duck Curry with Coconut Milk

Ingredients:
- 500g boneless duck breast or thigh, chopped
- 1 onion, finely chopped
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 cup coconut milk
- 1 tomato, grated
- 1 teaspoon grated ginger
- 2 tablespoons oil
- Salt to taste
- Chopped coriander (for garnish)
Instructions:
- Heat oil in a pan and sauté onion, ginger, and turmeric until fragrant.
- Add curry powder and duck meat. Stir-fry for 5–8 minutes.
- Add tomato and simmer for 10 minutes.
- Pour in coconut milk and simmer gently for another 15–20 minutes.
- Garnish with coriander and serve with rice or flatbread.
