Slow-Cooked Duck Stew with Vegetables

Ingredients:
- 1 kg duck pieces (with bone)
- 1 large onion (chopped)
- 2 carrots (sliced)
- 2 potatoes (diced)
- 2 tomatoes (grated or blended)
- 1 tablespoon tomato paste
- 2 teaspoons duck spice mix
- 2 tablespoons cooking oil
- Salt and pepper to taste
Instructions:
- In a pot, heat oil and brown the duck pieces until golden. Remove and set aside.
- In the same pot, sauté onions until soft, then add tomatoes, paste, and spices.
- Return duck to the pot, add vegetables and enough water to cover.
- Cover and simmer for 1.5 to 2 hours on low heat until meat is tender and sauce is rich.
- Serve with pap or steamed bread.
Perfect for cold evenings or Sunday lunch.
